This savory Rosato is made from the native Sicilian Nerello Mascalese grape known for it’s expressive aromatics and spice. The Nerello Mascalese stock was taken by Aurelio Di Giovanna in 1968 from an old vineyard near Randazzo and introduced to Sambuca di Sicilia where it is now the 2nd most planted zone of Nerello Mascalese in Sicily, after Etna.
The grapes come from the Paradiso vineyard, with yields lowered by 50% by green pruning and green harvest. The grapes are hand picked, destemmed and direct pressed for about 2 hours. Vinification in stainless steel tank, temperature controlled, on the fine lees for 4 months. The wine is fined with bentonite and filtered before bottling.
The Rosato di Nerello Mascalese is pale strawberry in color with fragrant notes of violet, pomegranate and strawberry. It is round and soft in texture, with a mineral and savory finish.
