The Nerello Mascalese unveils the dedicated work in the vineyard aimed at containing the vigor of the native variety and reducing yields. The grapes, harvested by hand, come from the Paradiso vineyard at Contessa Entellina. Here the medium elevation and tuff soil give the wine its unique character and reflecting it’s territory.
Hand harvested grapes are de-stemmed, fermentation in stainless steel tanks with warm maceration on the skins for 18 days. Partial passage in French oak barrels for around 6 months.
With notes of fragrant cherry, raspberry and pomegranate this wine fills the mouth. Smoked sensations and notes of white pepper follow, with a pronounced mineral finish; a long and pleasant finish.
